For a quick yet satisfying meal on a busy morning, try this tomato basil sandwich.
The recipe layers ripe tomatoes and fresh basil, with a subtle balsamic tang that lets the natural flavors of each ingredient shine.
The bright acidity of the tomatoes and the fragrant basil complement each other to create a distinctive taste. The combination also delivers antioxidants — including lycopene from the tomatoes and beneficial compounds from the basil. Simple yet special, it makes an ideal breakfast or brunch.
During preparation, use any leftover tomato flesh right away or save it for another dish. Removing the seeds and draining excess moisture is important, as too much liquid will make the sandwich soggy.
Fresh mozzarella or ricotta can also be added, depending on your preference.
