The peanut butter and apple combination has been trending on SNS lately, winning fans as a recipe that delivers satiety and dietary fiber without spiking blood sugar. The one drawback for a full breakfast, however, is that it falls short on protein.
Realfood's recommended recipe fixes that with a peanut butter apple Greek yogurt, drawing on the rich protein in Greek yogurt. A drizzle of olive oil, which is high in omega-9 fatty acids, rounds out the nutritional balance.
To make it, thinly slice a tart Aori apple and arrange the slices over a sauce made by mixing peanut butter, Greek yogurt and allulose. Finish with a swirl of olive oil and a pinch of black pepper.
The sweet, nutty flavor with a subtle hint of pepper makes for a combination that is hard to stop eating — and at just about 10 minutes to prepare, it is ideal for a busy morning.
Red apples can be substituted for the Aori variety. Use unsweetened plain Greek yogurt, and choose a peanut butter made from 100 percent peanuts.
Ingredients (serves 1–2)
Half an apple, 3 tablespoons Greek yogurt, 1 tablespoon peanut butter, 1 tablespoon allulose, olive oil, black pepper
